  • From vines directly outside the chateau between 40 and 80 years old
  • Minimum intervention viticulture, working of the soil for natural weed control, no insecticides
  • Hand-picked into small boxes
  • Rigorous triage process in the winery
  • Largely whole bunch semi-carbonic maceration with slow fermentation at low temperature (15 - 20 days)
  • Matured in large old oak 3000 litre barrels (“foudres”) for 9 months
